DengYunxiang This time last year 1 was writing an essay aquot;A Pork Specialty- Cured Hoga#39;s Headaquot;. My wife, though bedridden, was still alive and in good spirits. She sent her son-in-law to buy a hoga#39;s head and asked the temporary cook we hired, to brush it, rinse it, and cure it with salt, preparing one of my favorite dishes. Alas!
